Contact the developers, tell them you want a better icon, wait for them to submit a new design to the eshop, download the newest updated version of the game. This almost never happens.

I figured out how to grab the icon images from the eshop also. If you right click on a thumbnail while browsing games, then select "copy image" at least using opera browser, you can then paste the image into a photo editor like MS paint and save it as an image file (1024x768).

white background with some text or logo is the standard for square enix. Although this is the unreal 4 engine logo so maybe something got messed up and the wrong icon was submitted

This is switch 2 exclusive icon, switch 1 stayed the same as before. Each system has a different icon
This is now the new icon for the switch 1 as well! they changed it so both switches have the same icon
I noticed something interesting. On the switch eshop when you search for a game, it now shows the actual icon that would appear on the switch homescreen instead of a random game image. I don't know how long ago they changed it, but you can use it to preview what a game icon looks like, even for games not released yet (but you can't save the image, and it's only a small thumbnail size).
